Turkey. You're probably going to eat your fill Thursday and still have a ton of it left over, even after you shovel heaps of it off with guests as they leave your Thanksgiving soirée.The thought of eating another bite of roasted or fried turkey on Friday may be as appealing as an appendectomy with a butter knife. It doesn't have to be.
The Internet is filled with scrumptious ideas for leftover turkey. Recipes range from Mexican spice to soups and casseroles, ensuring the dreaded turkey hash recipe and turkey sandwiches will be relegated to a less than fond memory of years passed.
The Southern Food section of About.com includes two recipes that are sure fire hits. Both are easy to prepare and require minimal work - great news for the Thanksgiving-weary chef in your domicile. MORE HERE

My Mom wants to have our neighbors over for dinner sometime this weekend and she said she wants to make turkey and all I could say was NO!

On Rachael Rays talk show the other day we saw her take a tube of pre-made dough, cut it into sections. Then she put in leftover turkey, cranberry sauce, stuffing and cheese (I would have done it without the cheese) then she wrapped the dough around a bit, and cooked them. It did look good.

It sounds just like a hot sandwich, only using fresh dough. Michael did the whole turkey, cranberry leftover sandwich thing today. Then he grilled it. I just like picking at the leftovers and savoring small bites.
