When it comes to what's going to be popular in the food industry in 2008, restaurateurs, chefs and grocers say this year will be all about the consumer taking control.
More and more people are developing a greater interest in foods and cooking, as well as knowing exactly where their food comes from, what the nutritional content is and how they can prepare quick and easy meals themselves.
"People really educate themselves," said Zach Roberts, owner of Sweet Escape gourmet deli in Broadway. "Consumers nowadays, they've got that Internet. You have very educated customers. You really have to know your product."
