When I interned for that charity a year and a half ago one of the things I did was go through their digital pictures to use in the presentation I was working on. Well at least you can't see back part in that photo. It just looks like what someone would have mounted like a deer head.
Chefnot I am like Alton, I don't buy sausage unless it's in the gelatin casing and if all that was available was the natural casing I wouldn't even EAT sausage.
Refrigeration? But look in the upper right of the photo and guess what that is.
