I just made a double batch of biscuits and sausage gravy three days ago and took some over to my daughter's. I noticed in the past few years there isn't much fat when you brown the sausage (I use Bob Evans in the roll) so the gravy isn't as artery-clogging as it used to be.


I normally make biscuits with shortening but sometimes I use the butter-flavored shortening or a combination of shortening and butter. I tried using (solidified) bacon fat and some crisp crumbled bacon once but, even though they were tasty, knew they were totally bad for you so I never made them after that. I don't always have buttermilk on hand so I use regular milk and they've always turned out great. I think no matter what type of homemade biscuit you make, they're a thousand times better than the hockey pucks in the can.

Whenever I make bacon, I pour the drippings into a glass jar I keep in my fridge. I use it to season things with if I don't have any actual bacon to throw in the pot (like it green beans, black eyed peas and such). My grandmother taught my mother to do this, who taught it to me. It may not be all that healthy, but I figure it if worked for them, it'll work for me.

Bluejeanz - I agree that just about any homemade biscuit is better. I've never been a fan of the biscuits that pop out of the can. I do know that there is one brand that comes in a bag from the freezer section of the grocery store that is pretty decent, but I don't remember the name of the brand off the top of my head.

BTW - I didn't know that Bob Evans sold their own brand of sausage in the grocery store. You mean like the restaurant, correct? I don't think they sell that around here. To my knowledge, all we have is either Jimmy Dean or Tennessee Pride. I have always eaten Tennessee Pride brand sausage.

Everything in moderation. I like bacon grease in beans. But you can use a small amount to flavor a whole pot so I don't see how it could be much worse than any other kind of fat as long as you aren't using a ton of it.

The Bob Evans Farm is located in southern Ohio so maybe that's why it's available here. I just assumed it was sold nationwide. It comes in one and two-pound rolls and is a lot tastier (to me) than the other two you named. They also sell it in links.

No, we don't get Bob Evans here in the PNW. However, whenever we'd go back to Ohio to visit, Grandpa would take daughter to the Bob Evans restaurant for breakfast.

Well you learn something new everyday. We do have Bob Evans Restaurants here, but I'd never heard of their own brand of food. I'll have to look at my grocery store later on. Even though I love sausage, I honestly don't eat it very often and don't usually wander over to that part of the grocery store enough to notice. I think in the past I've always grabbed the Tennessee Pride brand and left.

We have the Bob Evans brand here too, but Ohio is right next door. I think it's interesting what brands are popular in other parts of the country. Items I have seen my whole life some of you may have never seen. And I am sure you all have a lot of things I don't if you live in an area with bigger grocery chains.
