I am really partial to New Orleans cuisine, then of course there is the Texas brisket, ribs, and steaks off the grills, along with the fajitas. Yes Rick Bayless is a master of authentic Mexican, guess there really could be a gulf coast cuisine. One thing about it, I love to eat !

I love seafood! Since having mastered the right cooking time for Petrale Sole, halibut and scallops, I'm become even fonder of it. Plus, we get such incredibly fresh seafood out here it would be a shame not to take full advantage of the wonderful abundance available to us.
