All I can say is I wouldn't want to dress like they did in 1826, so I think food from that time period is out as well.

Hearth, or open fire cooking can be done safely, if you follow the basic food safety guidlines (preventing cross contamination, temperature, etc). I've never done it myself, but I remember a DI where Robert had to prepare a meal using 18th century methods, and it apparently came out pretty good.
