Wonder why they don't do these articles and include how to properly handel these foods, instead of just saying mayo retards spoilage, and not increases it. I see they tell us to watch for seafood but never say how to properly store it in a backyard hot day setting

I actually knew this about mayonnaise. It is startling how little the average person knows about food handling.

You would be amazed how much faster food will mold when you handle it with hands that have not been washed! I have been certified with ServSafe, and that class would give you the heebie jeebies!

Here is what I tell people.

Clean hands
clean work surface
clean utensils
and proper temperature will keep food very safe.
