I actually prefer the pickled jalapenos over the fresh. There seems to be more consistency in the heat and flavor. Maybe if I lived in an area where the fresh were more widely available I would feel different.

slice the fresh jalapeño in half clean and stuff with cream cheese they are great, or cut the top clean and fill with cheese and grill, olé ! yes the fresh are good, but so are the pickled both have their uses especially in southwest and texmex cooking.

I have seen them fixed that way. Seems to be getting more popular. They even have special grill items for making them now. Maybe I will try it once we get the all clear again.

I make some for my uncle. He likes the pickled ones stuffed with tuna salad. My cousin used to get the fresh ones and stuff them with cream cheese, wrap bacon around them and throw them on the grill.
