| It would be so nice to have a New Orleans style chef, that cooks and teaches us dishes from that area. I know Emeril use to do shows on it, then there was Lea Chase and Paul Purdhomme on PBS. But I know there has to be so many things that did not ever get covered, I have a recipe books from the area, a reprint of one from 1935, There is tons of stuff I would love to watch someone cook, since, some of the stuff I look at and go HUH ?
