The only thing I've replace cream with half n' half in has been chowders. And, they turned out fine.

Yep, same here, only in chowders and they also turned out fine. Just don't want to boil it as that changes the flavor. Generally we don't buy anything that says "low fat". Low fat cheese should just be called "rubber". And whatever you do, no not EVER, ever ever ever, buy low fat cream of mushroom soup.... Just please trust me on that one.....
