    I don't have a panini grill or any sandwich grill.

    I'll use a saucer and press it down in the pan. Works just fine.

    I have a flat griddle and a skillet. That works. If you do it just right you can toast Emeril's signature into the bread.

    I sometimes use one of those cast iron pans used for heating up tortillas. I forget what they are called but they are handy.
