April is National Grilled Cheese Month, and as obvious supportors of the holiday, we at Serious Eats want to know how far you'd go to prove your grilled cheese love. I usually like to add a slice of ham into mine. When I make one for uncle I put in slices of jalapeños or tabasco peppers.
And of course each sandwich has to have two slices of good ole craft american cheese.
I used to like to put bacon in them. Except one time I made bacon in the microwave for it but I cooked it waaaaaaaaay to long and it was so gross. Now I can't put bacon in my sandwiches. Its fine if I go out to eat and its in there, but I can't do it.

I like Swiss cheese in ALL of my grilled sammies. Any one that's grilled, Swiss is always the main cheese. Because it has far less salt than American cheese.
Any meat, be it pastrami, corned beef, bacon or turkey, even pulled pork or fresh brisket, Swiss is the only cheese that I'll eat in ANY sammie. Especially grilled cuban sammies!
