I don't use beef stock in my chili (with a "i"), but something close to it. A can of condensed French onion soup. No tomato sauce or paste either, but diced and seeded tomatoes instead.

I do a Texas style chili with cubed beef, Chorizo, onions, scallions, diced tomatoes, and beer for the liquid.

Ground beef, tomato paste, kidney beans, jalapeno and onion in my chili. Topped with cheese.

Ground beef, diced tomatoes, chili powder, a bottle dark beer, onions, celery (finely diced), kidney, black and pinto beans and a splash of salsa. Serve it with homemade corn jalapeno mini-muffins.
