Four Sterling Sauces From Chef Mario Batali

Mario Batali has launched a line of pasta sauces inspired by and made from the incomparable San Marzano plum tomatoes grown in the Sarnese-Nocerino area of Italy. They are made with fresh chopped onions and garlic, and include only fresh herbs and spices with no pastes or purees added. There are no preservatives, no added sugar, no high-fructose or corn syrup of any kind, and they are produced exclusively in Summer Garden Food's green facility. The Mario Batali Pasta Sauces are available in the following varieties: Tomato Basil, Alla Vodka, Marinara and a wonderfully spicy Arrabiata. I always make my own...it's so quick and easy and I always have tomato products in the pantry. What would an Italian kitchen be without them?

Oddly, I don't find Mario's sauces on this site unless I'm missing the link on their site?


I don't always take the time or have the inclination to make sauce though it's most often superior to anything in a jar. I have to say there have been vast improvements in jarred sauces over the years. The only time my sauce is quick is if I make semplici --all my other tomato sauces take a lot longer.

I usually just make my own sauce and I do use San Marzano tomatoes. My local Costco has started carrying them which makes me happy. A lot better price than at the regular grocery store. I always make up extra and put it in the freezer, ready to pull out for a quick supper.

A super easy pasta sauce to make that only involves three ingredients is: 2 cans San Marzano tomatoes, two onions (peeled and cut in quarters) and one stick of butter. Put in all in a pot, bring to a boil, turn down to a simmer and let it simmer for a couple hours, stirring occasionally. The tomatoes and onions break down making a nicely flavored sauce. Sometime I toss in some sauteed mushrooms at the very end.
