Mario's Lobster Risotto

Me and the wife are pulling out the stops tonight and trying the lobster risotto from Mario's Molto Italiano cook book.

We've never made a risotto dish before, this should be interesting.

Ha! I'm prepping the mesquite fire for the mixed veggies and I come in the house to hear "OH F*CK!!!".

The wife thought she poured the stock from the lobster down the drain, but it was actually the ice bath which the lobsters sit in following their time on the heat. This can only get better. :34:

It should be on the plate soon. The house smells wonderful.

Oh my. Friggin' delicious.

I singed the veggies just a bit because I was bouncing back and forth between the veggies on the grill and the risotto, but the risotto was perfect. Pics coming soon.

The veggies wait........


The grill waits, stoked with Kingsford mesquite charcoal and true lump mesquite coals.....


The lobsters wait.


Tomato paste and onions sweat it out.


And we start to build the risotto.




The lobster gets tossed in.


Some unsalted butter and chopped Italian parsley are added.


Did I mention that I was enjoying my favorite, Jack and Coke?


Not the best presentation, but it tasted excellent.

The risotto was perfect. It did need constant stirring. No surprise there. I can't wait to try some other risottos now.

Man that looks good . I need to start making some of Mario's recipes. I've been recording his show Molto Mario (in the mornings at 8:00am centeral / 8:30am)...making sure I get a few of them for when they stop airing him on FL....seems FoodNetwork has already stopped airing him.
