    I had brined a turkey breast, but not with alton's brine, alton's brine is far superior. I find that it is well worth the extra step. The pan gravy that I made from the drippings and the stock that I made from the neck was equally fantastic.

    Thanks guys, the fruit tart was made with a pre-made shell (heck you gotta cheat sometime!) painted with chocolate and filled with a white chocolate mousse, and covered with fruit, the glaze was melted apricot jelly (apple will work too). I don't have exact details, I made it a while back!

    Long Lake is near Naples Maine. About an hour from Portland. Not sure where Lincoln is, will look it up. Mom from Portland, Grandparents from Standish and Windham. Mom is in Augusta now.

    Not familiar, I looked it up on google maps it looks like it is on the tip top of the state. Even though I grew up near Lincoln, I spent very little time in the very north of the state! My niece and nephew lived for a while in Fort Kent (eagle lake) but I never made it up there. I would like to explore some places in Maine that I have never been to, it is such a big state there are a few places! I would also like to go back to Prince Edward Island CA, as a kid I didn't appreciate it and I bet I would now!
