Turley Wine Cellars is probably the reason that the term “old vine” means anything in America, and they are probably the reason that this style of unctuous very ripe wine came to be. Larry was the first one to really let his fruit sit out there till October. He and his sister have these great ranches and these 70, 80, 100 year old vineyards and have really changed the way the world makes wine. http://www.chamberswines.com/) , one of the best distributors on the west coast. She possesses one of the greatest wine palates I’ve ever encountered. We have these Sunday suppers with them every couple of weeks. For the last one we had a few weeks back, we did lamb roasted in must. We took lamb legs, boned them out into a roast and seasoned them with fennel pollen. Then we wrapped them in must from last harvest. Must is all the grapes that have fermented and have been taken off the wine. Covered the lamb in a big cloak of that, wrapped it in cheesecloth and then roasted it really slowly inside the must. It was crazy good.Larry and Suzanne have an unbelievable European wine collection, and on this particular Sunday they brought some Bordeaux and Burgundy - we had an old Burgundy which was great. And Larry brought one of his blockbuster Petit Sirah wines as well. Larry’s a great old southern boy, we’ve traveled around the country cooking together at these events together for years and years. I cooked at his first date with Suzanne, I cooked for their wedding. Larry helped me when I bought my vineyard by telling me if I didn’t buy it right then that he was going to come and buy it the next day. So I bought it. And then he came over with a chainsaw on the first day to help me prune it. Freaked me out – I took my life savings to buy the place and here he comes with a chainsaw!
