I've made Chiarellos meatloaf before and it is flat out the best I've ever tasted. I do some things different from him tho. first I add italian sausage to it, about a 60/40 split beef/sausage. The next thing I do is form an indentation on top so the marinara topping stays put rather than run down the sides while baking. I also top it with more parm reggiano after saucing it.

I also made mashed potatoes and heated up the leftover marinara to spoon over them and the meat.
I made just some simple steamed green beans dressed with salt/pepper and butter.
Also sauteed some onion and garlic, then threw in seeded and cored chopped roma tomatos, and yellow n green squash. Finished with basil and parm reggiano.
