Birdseye mediterranean blend

A new product. I saw this at the store today and I decided to get it. Now I need to decide what to use it for.

It has beans, artichoke, peppers, spinach and onion. I am thinking maybe soup.

Sounds like a wonderful stir-fry...vegetarian-style! Pour some olive oil in a hot pan (12" All-Clad fry-pan, LOL!), throw in some crushed red pepper, 2 or 3 cloves of minced garlic (applause!), then toss in the bag of Bird's Eye!

Then again, yeah, that WOULD be good soup ingredients!

Beans, artichoke, peppers, spinach and onion--Could they be used in a dip or spread or are the pieces too large? How about a topping for pasta with a little cheese?

They are fairly large but I have a food processor. Pasta would be good. I think there is also a salad recipe on the bag.

I looked again at the bag, it has tomatoes and zucchini as well ... no onion. But I have onion to add.
