Question What is epazote?

What is epazote?
A: Epazote is a leafy Mexican herb with a strong aroma, somewhere between lemon and fennel. It has historically been thought of as a digestive aid, so you often see it with beans or rich stews. If you have a Spanish grocery near you, you might be able to find it fresh; if not, dried works, too — use a little more than the recipe calls for and crumble it between your fingers to maximize the flavor. If you can't find it anywhere, you could also use a combination of lemon zest and tarragon, or just leave it out — it's a subtle flavor, and its absence won't ruin your dish.

I have some of espazote but it's old, I should probably throw it out. It was in one of my Penzey's orders. It smells like gasoline.

I looked it up and it says some of this smells like gasoline, why would you put that in your food ? sometimes you wonder, who in their right mind would use such a spice and even then pass it on the your offspring, here use this, it smells like that stuff I use to siphon out of the gas tank for the tractor. Think I would have to pass on this spice.

I put a tiny pinch in some black beans. It didn't really change the flavor. Some say it keeps you from getting gas.

well, I wonder if it works, I soak my beans over night in water and a tablespoon of vinegar that also suppose to stop the gas, although I still, we won't go any further.

I made black bean soup yesterday. Soak the beans in water all day, but no vinegar, never heard of that. It was great! Served it over brown rice with chopped onion and cheddar cheese.

I used to watch "Daisy Cooks" with Daisy Martinez on PBS on Saturdays and she used to use a lot of it in her cooking. She used to say if you couldn't get it to use a combination of cilantro and another ingredient (that I can't recall) to give the same flavor. Reading through these posts, maybe that other ingredient was something you'd get at the local Shell station, heh-heh.
