Steaks. Any kind as long as they're tender and the meat is rare. I don't eat beef that often but, when I do, I want it my way.

chef Jalapeno Poppers & Beer Can Chicken

Ever since I say Guy Fieri cooking Jalapeno Poppers with Rick Schoenberger from The BBQ Shack I have been hooked on Jalapeno Poppers. I have made them for the past 6 BBQ parties I have gone to and everyone loves them. They are easy and fun to make. Then there’s the Beer Can Chicken. I have been working with different spices mixed in with the beer to get a new flavor. I have even used a Bud can with Sierra Nevada Beer. Nice Flavor. On a large grill you can cook both of these at the same time and you’ll have an appetizer and a main course.

I saw a special rack made for the grill to hold the jalapeno's at Williams Sonoma last time I was there.

I have a rack in the shape of Texas been doing those poppers for a couple years now. They are good but boy can they get hot depends on your jalapeno.

This is a tough one.

I like a good steak on the grill.
And prefer my burgers that way.
Saturday I made Alton's skirt steak fajitas, which are the best fajitas I've ever made and are a summer menu staple.

But

I just love grilled salmon.
Rub some Old Bay on it and on to the grill. Good eats, for sure

One of the few times I do eat red meat of any kind is when it's flamin' on the grill. We had Burgers and Dogs for the 4th, and it was tasty.

I've grilled just about everything, from asparagus to smoked pork, rotisserie chicken, salmon, etc. But my favorite is still T-bone, because to me there are no other options to cook it that taste nearly as good. I can always roast a chicken or saute veggies, but good luck replicating the taste of a good steak without the grill.
