We learned how to make it in Home Ec, Junior High back in 1963. Back then, everything was made from scratch and using something from a box, or pre-made, was a luxury.

I don't like mayo on my sandwiches. Never have.

BUT

I loved that episode of Good Eats. I learned about making an emulsion. A few years later, I went with my mom to a diabetic cooking class and I was the only one in the class who knew about making a proper emulsion.
