Today I buy them at a meat market that makes their own and only uses the 'best' meat...no by-products or variety meat. Eewww, that variety meat stuff is horrible!

I know. I just don't like to think about it. And It would be more difficult to see in some items (like pepper ) so I try to convince myself I avoid as much as possible.

You could make one like Alton and attach one to your drill.

Alton also has a coffee grinder he uses just for spices.

I have a few of the old twist kind.

I have manual grinders for the pepper, but an electric grinder for the coffee beans.
I also use a mortar and pestle for crushing spices.

With my latest penzeys order I bought the white peppercorns and while we were on our trip this weekend I bought a see thru grinder so I can see it's the white.

We use both and a hand grinder. And I do keep red for sausages. I use to make pepper loaf and I used white with it. I need to get that recipe out.

Variety meats, usually referring to organ meat, is seldom found in your hot dogs and balogna today. Less it's the very cheapest brand. You will find them today in your slim jims and such. Fyi, I mean...
