    Do any of you ever buy flat iron steaks?

    I really like them. I get the large whole steak and cut it into strips to serve it. It's has great flavor.

    I've used the strips in stir-fry. Saw a lot of flat iron steak in the cases in the local meat markets when we've been out west. You don't see it a lot under that name around here.

    We sell flat iron steaks in my store and they are quite tasty. This, if I'm not mistaken is a fairly new cut of steak shoulder I believe. The last cruise that I was on, they had replaced the Ny Strip with flat iron steak (most likely because of cutbacks because of fuel), and I was skeptical, but it was wonderful every time I had it (they offered it every night), decently tender and lots of flavor.

    We sell it cyrovac in a Montreal seasoning, it is quite good.

    I looked it up in my copy of "Field Guide to Meat" (Which by the way is a handy little guide!) and it's also called a top blade steak which does come from the uppermost portion of the shoulder. Says it can be grilled, skillet cooked or stir-fried.

    First time I ran across a flat iron was in a truck stop, turned out to be a nice little steak, ask the chef what they had done to it to make it so tender after finding out it came from the front shoulder, said they marinated them for 24 hours before serving them. They just recently started showing up in the markets here in Houston, priced cheaper than the other steaks, because it is a tougher muscle meat. Really not surprised that it is more of a southwestern cut since we even use skirt steak for fajitas. Seems to be more meat marinated here than southeastern, or northern states. But as cooking becomes more worldly and our cultures become more mixed, we all will find new things to cook and different ways of cooking them.

    I totally agree. I remember when, Olive Garden was exotic, now there are so many flavors to enjoy.

    Even our little area is becoming more diverse. The Charleston area has long had Asian and Mexican markets, but not we've got a new Russian market.

    I just recently heard that we have a Russian market in town, I need to check it out. A Russian co-worker told me about it.
