Many people believe that frozen and canned vegetables contain fewer vitamins and minerals than their fresh counterparts. But experts say that vegetables that are picked and immediately flash frozen or canned can have the same nutritional value as fresh vegetables. That's because many fresh vegetables are shipped long distances in the heat and cold, where they can lose vitamins and minerals before they make it to the grocery store shelves.

Yes, I did know that, but prefer fresh over canned or frozen. Frozen is my second choice.

We eat lots of frozen veg, unless I'm making a stir fry, then I really prefer fresh. In the late spring and summer we have a lot more access to local fresh stuff, so it is fun to go to the huge farmer's market and pick up stuff, it is usually a lot loss expensive too.

Fresh is always better but some canned stuff is good. Canned tomatoes are not bad.

True, I do use those quite often. Not too crazy about canned peas, though. They are too soft for my taste.

Yep, I knew that because most of the frozen veggies are frozen the day they are picked. I usually buy Bird's Eye frozen veggies for they seem to be the best quality.

After fresh, frozen is what I turn to, but I do love the easy use of canned tomatoes. Those I get by the case at Costco. I do tho, keep some other canned veggies on hand like sweet potatoes.

I'll be glad when we start getting fresh local produce again. The market near my house reopens Feb. 28th. They close for about 2 months after Christmas.

I kind of thought that a while ago, and since I don't buy fresh veggies that often, I DO buy the frozen ones.

And when I get home with them, I immediately remove them from their boxes or bags, divide them up into smaller portions and vacuum seal them so that they don't dry out necause air is still in whatever they come in.

I told a D.C. friend I'd be visiting in May and asked if we could go to a farmer's market. He said it would be too early. I scratched my head for a minute. I truly did not understand. Then it dawned on me. (That's about when the farmer's markets close here in Florida. It gets too hot.)

Because of the recent near-nationwide extremely cold weather that we've been having this winter, farmers in Florida have been afraid that their crops might freeze, so they've taken measures to protect them.

But they might raise the price on fresh fruits and veggies, especially oranges.
