What's Your Favorite Summertime Veggie? ...and how do you prepare it?
With all there is to chose from, it's hard to pick just one as I enjoy them all!
However, I'd have to say tomatoes...just love them! Have 6 different varieties of cherry tomatoes growing in pots on the patio and, boy, are they delicious! I eat them as I water the plants..what a treat!
The only ones that aren't ready yet are the Snow White variety. Have had the Green Olive, Chocolate Cherry, Purple Plum, Olive and Tiny Tim. The Purple Plum and Green Olive are two of my very favorites, followed by the Olive and Tiny Tim. That plant is maybe 6 inches high and LOADED with juicy, round fruit.
I make them into salads or eat them off the vine.
What's your favorite?

CORN! (what no one is shocked?)

I boil it, I roast it, I grill it, I steam it and I have even made it on the campfire.

Do you ever just eat it raw? I do or use it like that in a salad. No need to cook it.

Cantalopes would be but it is a fruit, so green onions, I love to sit with a salt shaker and eat green onions.

I love all fresh veggies. My friends grow sweet corn, and I raid the corn patch and pick the the ears just before they are ripe. (I know....shame on me), but they are SO tasty and sweet and juicy. Maybe I'm the only one that likes sweet corn a tad under-ripe? 2 minutes in boiling salted water...
And I love garlic/butter brushed on, with a touch of sea salt and pepper. I'm in heaven. I don't even need an entree.
I have a puple heirloom tomato that is not doing well. I'm hoping to get at least 1 good mater off that plant.
Don't even get me started on zucchini. I don't grow any, but am overrun. Hey all you zuke growers/givers....I love them, but....NOT WHEN THEY ARE THE SIZE OF A SMALL TRUCK! Thank you.

I like to take the big ones, carve out the inside and stuff them with veggies, rice and meat. Kind of like stuffed green peppers, only using a zucchini. It's really delicious!

Being from Nebraska, corn is up there on my list...but I don't think anything beats tomatoes...I just slice them with salt and pepper, a drizzle of some fruity olive oil, and sometimes some fresh mozzerella or feta!

So hard to pick any one item and our garden is overflowing this year with so many goodies!
Who can argue with the homegrown tomato? We're consuming them everyday now on sandwiches and in salads or just out of hand with salt. The rest will be blanched and frozen or made into sauce for winter use. This year we grew yellow cherry tomatoes and they rock! The skin is a little thick, but manageable.
Zucchini is always a favorite and a part of so many dishes. Most of it has hit the freezer. One plant and we are still overrun!
Looking forward to our crop of brussel sprouts, peppers and late lettuce. We've been growing microgreens all summer too..... We've already harvested carrots and beets and spinach...

Sweet corn is my #1 veggie. Like to grill it and then season with a little salt and pepper and brush with melted butter. Also, enjoy green beans and green peas.
