You know I don't have any Ancho Chili Powder for the potatoes (I couldn't find it at the store). Do you think I should just do the cumin and kosher salt or try something else?

use regular chile powder and add a little Cayenne to it, not much difference in the flavor, the Ancho chile powder has some heat to it and slightly more smoky flavor

I ended up putting a little garlic in a pan with olive oil, cooking that up a little, then putting it on top of the potatos when they were done.
