    chef August 2008 Food of the Month: Zucchini

    A new feature here at FNF. Each month we will choose an ingredient or feature food for our members to prepare in some way during the month, and share with everyone what they made using said item. This month I am choosing Zucchini because this is the time of year you often have to pretend you aren't home to avoid getting more of it as neighbor's gardens overflow.

    So make a little time this month to prepare anything edible with zucchini and please do share your results.

    nieghbors with gardens ? I wish, will have to go find some, that looks decent. Then what to make hmmmmmmmmm will have to give that some thought.

    Already used zucchini this week. Made two things. First, a Chocolate Zucchini Bread....bittersweet and unsweentened chocolate, big chocolate chips with dried currants and almonds. Made a cream cheese spread with honey and cinnamon to put on top of each slice. Just heavenly!

    Then, I made Ina's Zucchini Gratin, but with a twist. Instead of nutmeg and Gureye (sp?) cheese, I made an Italian version. Used provolone, mozzarella and freshly grated parmesan with Italian herbs. Turned out extremely good!

    I so love zucchini....have a few more dishes up my sleeves for this versatile veggie.:coolg:

    Picked up some at the farm market yesterday and plan on making my mock crab cakes. They make a great meatless meal.

    Made stuffed zucchini last night. Bringing some to two of my friends at exercise this morning...they had requested it and I'll surprise them.

    The zucchini were huge! Someone brought them to class as they have tons of them in their garden. I sure am enjoying them! Yum!!!

    That is for sure on getting your neighbors overflow. My wife makes a bunch of zucchini bread and then freezes many for winter. As big as my garden and melon garden are, and knowing we use a bunch of it, I never planted the first hill. And it's still backing up in the garage.
    There is room for all God's creatures....right next to the mash potatoes.

    You must learn to love to learn.
