Stretching the Corn Season

IS there anything better than succulent summer corn? And can one ever eat enough of it?
Usually, I cook my bounty as soon as I get it home, which preserves its sweetness and allows me to gorge for several days without worrying that the sugar in the ears will turn to starch. As the week goes by, I toss the cooked kernels into salads, soups or pasta dishes, or reheat them with fat chunks of butter and lots of black pepper.

Grab a bunch of it and freeze it now. I did last year and it was very good!

Yeah, it's good. But it's not quite the same as having it nice and fresh. I love going to the store and seeing it all there. They even have a trash bin there so you can shuck it right there in the store so you can look it over good and don't have to bring that mess home with you.
