Use For Those Turkey Day Leftovers

Break out of same old leftovers

If yet another round of soups, sandwiches and casseroles cobbled out of Thanksgiving leftovers leaves you uninspired, one of these recipes may get you out of the rut.
Try these popover-style breakfast treats studded with chopped turkey and stuffing. The combination of eggs, stuffing (think toast) and turkey works great together. Serve with maple syrup.

Didn't have all that much leftover. A couple of really good sandwiches and that's it. Worked out great this year.

Finished off our leftovers last night. Which may be good, because for the past three night (after eating turkey, dressing, etc) I've been having the weirdness dreams. Guess they were turkey-induced!

I eat my leftovers as reheated thanksgiving dinner, rarely do anything else with them.

I made stock from the carcass, this is my first time making stock, can you believe that? I have boiled down chicken for soup, but never made real stock, mainly because I haven't had a stock pot (I know it's hard to believe since I cook so much). This stock was awesome, I just through in the carcass, celery, carrots, onion, bay leaf, and whole peppercorns, I let it simmer for 3 1/2 hours, and strained it. Lo and behold, when I took it out of the fridge to skim the fat and pack it up for the freezer, it was like soft set jello, success!!!!!!!!
