I asked Ted Allen a question.

As a kid, my parents always put bread in the fridge to keep it from molding as quickly. But someone told me that it still molds, only it doesn't show visible growth because of the low temperature. Is this true?

I remember a lot of people putting bread in their fridge way back when. I never understood it.

Here, where's hot and humid, lots of people will put their bread in the fridge. I don't like it, because I don't like my bread cold and stiff. Anyway... I've had bread mold while in the fridge and it was visible.

Yes it still does mold but at a slower rate than having it on the counter, at least it becomes visible after a longer period of time. I have heard it's still growing it just takes longer for it to show on the surface of the bread. Sort of like how plants grow below the surface and break thru when things warm up.

Must be something with the humidity, because we can not keep bread for more than week here on in the bread box and it has visible mold, wife can not stand cold bread. One of the boys who lives up IN Lubbock now had a loaf of bread for 3 months, was tiff but it had no mold that we could find, he said they never have had anything mold there, no humidity there is real dry.

I agree that humidity seems to be the cause. When we were traveling in UT and AZ in the RV a couple summers ago, bread would stay mold-free for the longest time, mainly due to the drier air.

Someone needs to come up with a bread box that has a dehumidifier in it. I'd buy one.

$$ isn't as bad as I thought it would be. I've probably thrown out that many $ in moldy bread. Maybe I could retrofit my current breadbox with a UV light?

Guess it could double as a night-light in the kitchen.
