Leftover Veggie Frittata

Description:
Use a cup and a half of your leftover veggies to create this flavorful frittata. It's great for breakfast, lunch or dinner!

Easy
Serving Size:
Makes 6-8 wedges
  1. - 1 1/2 cups of leftover veggies
  2. - 8 eggs
  3. - 3 tblsp. water or milk
  4. - 1 c. grated cheddar or blended cheese - you could even experiment with swiss or other types of cheese
  5. 1 onion, diced
  6. - salt/pepper as desired
  7. - butter or olive oil as desired
  8. - Can also add herbs or seasoning mix as desired
  9. - Add a dash of hotsauce for a kick if you want
Preparation:
  1. Preheat the oven to 400 degrees
Instructions:
  1. - In a 12-inch non-stick, ovenproof pan, saute the onion in butter or olive oil until translucent.
  2. - Beat 8 eggs and water/milk in a bowl
  3. - Add cheese and seasonings to eggs
  4. - Mix the leftover veggies (you may want to chop them up a bit if they are large pieces) in the onions to reheat.
  5. - Add the egg/cheese mixture to the non-stick pan.
  6. - Stir eggs, cheese, onions, and veggies to combine.
  7. - once mixed evenly put the pan in the oven for approximately 20 minutes or until the top is golden brown and the eggs are cooked through.
  8. - Remove from oven, let cool for about 5 minutes and enjoy!

I like to do these for supper sometimes. Great way to clean up not only leftover veggies, but meat too. I like to call them "my cleaning out the fridge frittatas."

My favorite veg to use in this recipe is Trader Joe's Thai green beans (prig khing??) It gives a fantastic flavor to the frittata. I don't even use leftover - I make the beans specifically for this frittata. Half a bag of beans and one sauce packet works.
