Potato Latkes

Serving Size:
8 to 10 people
Ingredients:
  1. 4 lbs baking potatoes
  2. 2 large carrots
  3. 1 large onion
  4. 1 eggs
  5. 3 teaspoons salt
  6. 1 teaspoon ground pepper
  7. 1 ½ teaspoon baking powder
  8. 4 tablespoons matzo meal, cracker meal or all-purpose flour
  9. Vegetable oil, for frying
Preparation:
  1. Peel and Grate the potaoes
  2. Peel and Grate the carrots
  3. Grate the Onion
  4. Put the potatoes and onions together and squeeze out all of the moisture possible
Instructions:
  1. Place a large, non-stick frying pan over medium-high heat and add enough oil to cover the bottom of the pan
  2. Place potatoes and carrots in a large bowl
  3. Add carrots eggs, salt and pepper, baking powder and flour.
  4. Mix well to combine.
  5. In ½ cup portions (larger if you like), add potato mixture to the hot oil.
  6. Press latkes down to uniform thickness.
  7. Fry until golden brown, crispy and cooked through.
  8. Drain latkes.
  9. Serve with sour cream or apple sauce

Had them for lunch today. Plenty more for a couple of days!
I like them. Simple and colorful. I only shredded the ingredients. I might grate them next time...or a mixture of both. The shredded carrots make it look nice.

Chap,

Just as a point of clarification, Grated and Shredded.
I use a box "grater" on the large holes and call the finished product grated for that reason.
How to you shred?
Maybe we are just using different terms for the same technique.
