    Potato Soup

    Description: This is a great soup for a cold day. You can use lower fat cream cheese and milk to cut fat and calories or make it very rich and use heavy cream if you are splurging a bit.
    Serving Size: 4 to 6
    Time: 30 minutes
    Difficulty: Easy

    Ingredients:
    1. 4 cups chicken stock
    2. 4 cups potatos peeled and chopped
    3. 1/4 cup celery chopped fine
    4. 1/4 cup onion chopped fine
    5. 1/2 teaspoon salt
    6. 1/2 teaspoon white pepper
    7. 1/4 teaspoon ground cayenne pepper
    8. 1 cup milk
    9. 1 (8 ounce) package of cream cheese cut into chunks
    Preparation:
    1. Peel the potatoes and cut them as well as the other vegetables into small bite size chunks.
    Instructions:
    1. In a soup pot combine the chicken stock, potatoes, onion, celery and spices.
    2. Boil on medium heat until potatoes are tender.
    3. Remove and mash about a half a cup of the potatoes then return them to the pot to thicken the broth.
    4. Reduce to low heat.
    5. Add cream cheese and milk stirring well, until the cheese melts.

    That sounds really good and I'll have to give it a try.

    The other night I made Emeril's Carrot Soup...it is SO delicious and good for you too!

    It's one of our favorites. Especially in the winter. It was the only recipe I had a photo of and I wanted to test out the new feature so I used it.

    I made that last year as per your suggestion and it was great. Once the weather gets chilly I'll do it again. Can't even think of soup right now.

    Must be too hot? I love soup as well. I just made Emeril's Carrot Soup and it is delicious. Today he featured three soups and I printed them all out. I'm a big soup fan and his recipes are THE best for soup.

    ACK I just made potatoe soup this week- my receipe has potatoes-chicken broth- milk-sour cream--cheddar cheese-bacon-onions-salt-pepper um I think thats it- its dreamy! I never could cook before in the summer but with the Central Air the skys the limit (well er let me not get carried away)
    nuttin like a good cup of joe!
